Old vine Chardonnaysome over 50 yearsfermented without sulphites, raised to speak in purity, not polish. You pour, and the glass shimmers pale gold, the bubbles fine and steady like someone who knows theyre being watched. On the nose, its all tension and gracegreen apple, citrus oil, warm brioche, and crushed seashells. Then the palate takes over: creamy mousse, tight acidity, lemon zest and
